I think that she used a banana bread recipe and substituted persimmons for the bananas. It was FANTASTIC--kind of what you would imagine fruitcake should taste like, and absolutely nothing like I imagined it would be. Since you have so many, you might give it a try! She also makes persimmon wine, but I don't think that I'll be trying any of that in the near future. I think that you are supposed to wait for them to drop to the ground rather than picking them (or is it the other way around?) I'm sure that you will find experts who can tell you.
